Chickpea Tuna Sandwich

You don’t have to contribute to overfishing to have a delicious “tunafish” sandwich.

You will need your favorite sandwich bread, cooked chickpeas, vegan mayo, plum vinegar, mustard, relish, lettuce, sliced onions, and tomato.

To make the “tuna” mash the chickpeas with a fork and mix in the mayo, vinegar, mustard, and relish to taste. Then place on the bread with lettuce, onions, and tomato to top.

Vegan Sloppy Joe on a Kaiser Roll

This recipe is great for the whole family.

You will need a roll (a favorite for this recipe is the kaiser roll from Baking Company), cooked lentils, minced onion, diced bell pepper, tomato sauce, salt and pepper, cumin, chili powder, and vegan worcestershire sauce.

To make the filling grill the onion and bell pepper in a sauce pan with a bit of oil. Once the vegetables are tender add the tomato sauce, worcestershire, spices, and lentils. Let all cook together for five to ten minutes and then put on your kaiser roll.

Spicy Southwest Wrap

Filling, spicy, and delicious!

You will need a wrap or tortilla, black beans, sliced avocado, chopped tomato, sliced onion, pickled jalapenos, corn, and salsa.

To make this wrap just pile all of your ingredients into your tortilla and wrap it up tight, watch out for the jalapenos, they pack a punch!

Tofu Banh Mi

Try mixing things up with this satisfying and delicious sandwich that is filled with protein and flavor.

You will need lime juice, shredded carrots, brown sugar, soy sauce, sliced onion, firm tofu, vegan mayo, sriracha, cucumber slices, cilantro, and a baguette.

Start by combining lime juice, vinegar, carrots, and brown sugar in a bowl and set aside. Next heat up soy sauce, oil, and a bit more brown sugar in a saucepan and add the tofu and onion and cook until brown. To assemble the sandwiches spread vegan mayo and sriracha on the baguette and then layer the cooked tofu, carrot mix, cucumbers, and cilantro.

TLT (Tempeh, Lettuce, and Tomato)

All of the taste of a BLT, with none of the guilt!

For this recipe you will need sliced sourdough bread, romaine lettuce, smoky spice blend, sliced tomato, tempeh, and vegan mayo.

To prepare the tempeh slice it into strips and coat it with the smoky spice blend and then saute in a pan for three to four minutes per side. After the tempeh is cooked spread the vegan mayo on your bread, and add the tempeh, lettuce, and tomato. This sandwich also goes great with avocado!
